Abstract

Tilapia and spinach are local foods rich in protein and iron. Processed tilapia and spinach are expected to be an alternative snack for toddlers. The purpose of this study was to determine the nutritional value and acceptability of snacks for toddlers made from tilapia and spinach. This type of research is experimental with the creation of 9 snack recipes. The nutritional content was analyzed using the 2007 Nutrisurvey software and the Indonesian Food Composition Table (TKPI) 2017, and acceptability was carried out using the food weighing method on 30 child panelists at Bumble Bee PAUD Banjarbaru. The results obtained snacks with protein, Vitamin A and Iron content and the best acceptability (90%) was tilapia spinach dim sum. Tilapia spinach snacks can be used as a healthy alternative snack to prevent stunting in children. Keywords: spinach, tilapia, snacks
